Traditional Seafood Paella for 20ppl
1. Heat Paella grill
2. Season 2# Sea Scallops with Sea Salt
3. Evenly coat bottom of pan with oil
4. Sear each side of scallops until golden brown and remove
5. Season 2# 16/20 peeled and deveined shrimp with Sea Salt and Cracked Black Pepper
6. Sear each side for 30 seconds and remove
7. Add more oil to coat pan
8. Sautee 2 chopped Vidalia Onions
9. Add about 20 garlic cloves sliced thin on a mandoline
10. Add 2# diced Chorizo sausage and sautee
11. Add 1 bottle of white wine
12. Once the alcohol is cooked off add 3 liters of Seafood Stock
13. Add 1 jar of your favorite tomato sauce
14. Sprinkle an even coating of Spanish Paprika
15. Add a good pinch of Saffron
16. Mix around and bring to a boil
17. Add 3# of Bomba Rice and mix around pan until evenly distributed. Do not stir the rice after this step.
18. Let Paella simmer on medium heat until half the stock is absorbed.
19. Add Scallops and Shrimp back in to pan by pressing in between pockets of rice and stock
20. Repeat this process with 2# of Mussels
21. Add 1# of English Peas
22. Add 2# of Roasted Red Pepper strips evenly over rice
23. Continue cooking until all of the stock is absorbed in to the rice
24. Reduce heat to very low and cover pan with aluminum foil
25. Let steam finish cooking rice for at least 15-20 minutes
26. Finish by garnishing with Lemon Wedges and picked parsley leaves
27. Enjoy and be sure to scrape the bottom for the Succarat
